Biscuits

And last but not least I made some cookies with my son today. I used an old recipe for jammie dodgers. You need 125g soft butter, 1 pinch of salt, 70g confectioners sugar, 1 packet of vanilla sugar, the egg white of one egg and 175g flour. Mix all of these thoroughly and into a ball of pastry that you put in the fridge for 1 hour.

When the hour is up, roll out the pastry on a floured surface and let your cookie cutters do the rest.

Put the cookies in a fairly cold place (I put them on the balcony) for 20 minutes and then in the oven for 6-8 minutes at 200C.

I frosted them with icing and added other bits and bobs from my sugar deco cupboard.

Well, my test run for the big Christmas cookie frenzy was a success.

Tuna Biscuits

For dogs, that is. Although they would be perfectly safe for human consumption.
My sister and her dog are visiting today and I thought I’d bake him some treats.
The recipe is a mix of various recipes from different websites.
Mix 200g flour, 1 egg, 1 can of tuna (in oil), 2 tablespoons of oatmeal, 2 tablespoons of half-fat curd and a splash of milk.

Roll out the dough and cut out cookies.

They bake in the oven for 20-25 minutes at 160C. Leave them to dry in the turned off oven. Let’s see if the doggy like tuna bikkies in the shape of squirrels…

Ovaltine Digestives

Today I made an Ovaltine chocolate crumble cake for some tennis players. I
will post the cake recipe (which is my own) on mnamnam.com tomorrow.
For the crumble I mixed 100g sugar, 100g butter, 150g flour and 50g ovaltine crunch.

I had quite a lot of the crumble mix left, so I decided to make some Ovaltine digestive biscuits out of it.
To the crumble mix I merely added 50g rolled oats and 3 tablespoons of milk.

I put the dough in the fridge for 30 minutes. The I rolled it out, made biscuits with a heart shaped biscuit cutter and put those in the oven at 180degrees for 20-25 minutes.
