Red currants are my favourite berries. I love their tartness and usually eat them straight from the stalks.
The woman I bought today’s red currant from gave me her recipe for a red currant wine cooler. Simply melt 2-3 tablespoons sugar in a pan and add 1.5dl white wine.
Pour the sugar mix over 200g red currants and leave in the fridge to cool and infuse for at least an hour.
When the time for infusing is up, put some ice cubes in a tall glass and fill half of it with the wine/red currant mix. I also added some lemon balm leaves.
Now top it up with sparkling wine and enjoy!
The red currants don’t really give off any flavour but eating them out of the glass when the drink is finished is wonderful.
