August 1st is the Swiss national holiday. There is really only one thing to do to properly celebrate: have a barbecue with potato salad and Swiss sausages.
I made a broth based dressing for my potato salad using a Betty Bossi recipe. For the dressing mix 2dl beef broth with 0.6dl oil and 0.4dl vinegar. Season with salt, pepper, herbs (I used parsley), 1-2 tablespoons of mayonnaise and 1 tablespoon of mustard.

Boil your potatoes, skin them if you must (I usually don’t if I use new potatoes) and pour the dressing over the hot potatoes and leave to soak for a couple of hours.

Next fill your picknick basket, pack family and friends in your car and look for a lovely place to have your barbecue.

Build a fire and start your barbecue! We grilled sausages, corn and plums wrapped in bacon. Yummy!
