Tortilla de patatas

Today’s dinner is spent in front of the TV watching the Euro 2012 final. I already made an Italian dish this week so today I opted for a Spanish staple: tortilla de patatas.
For 2 persons I used about 250g (already boiled) potatoes, 1 onion (thinly sliced), 3 eggs, a handful of peas and half a red pepper (diced).

First I put some olive oil in a pan and stack all the ingredients in layers.

I fried it on one side for a while and then added the egg mix consisting of eggs, salt, pepper and a herb mix.

After 4-5 minutes I flipped the tortilla over (with the help of a plate, of course).

I repeated the flipping over bit for another round.

Both sides turned out golden brown and the tortilla slices were scrumptuous!

When I cooked the Italian dish (Germany v Italy) the Italians won. I wonder whether the Spanish team will be victorious today. If so, I will call myself claircookant henceforth!
