Chocolate mousse with a boozy raspberry coulis

Today I made a family favourite: chocolate mousse. The recipe is from
Betty Bossi and a sure thing.
The trick is to beat the egg yolks (2 of them) with the sugar (2 tablespoons) until the mix is fluffy.

To melt the chocolate (100g, high cocoa content, I used chocolate containing 72% cocoa) I poured boiling water over it, the drained the water off and added the chocolate to the egg/sugar mix.

Next I added whipped cream (2dl).

Once the cream was carefully folded in, I added the whipped egg whites (2) and folded them into the chocolate cream mix.

Then the mousse was sent off to the fridge.

For the coulis I boiled raspberries in vodka (hello Martina!), mixed in some gelatine and packed it off to the fridge, too.

A classic dessert and a winning combo!
