Peas from the pod

Making Battenbergs is a great challenge and great fun but everyday food it is not. So I opted for another simple dish today: fried rice with vegetables. And I brought back childhood memories by buying peas still in the pod. They are actually a really beautiful vegetable!

Besides the peas I used broccoli, cherry tomatoes, onions and garlic.

For the fried rice I sweated the onion and garlic in some olive oil, added boiled wild rice and two eggs.

I seasoned the rice and stirred it until the eggs were mixed in well and added some diced ham and the rest of the vegetables.

Finally I stirred in some grated parmesan cheese and put the fried rice on the table.

Not a spectacular dish but a fine tasting healthy meal! Sometimes all you want and need is yummy simplicity!
