Battle with the Battenberg

I need a cake for a special occasion tomorrow and thought I’d use this as an opportunity to test my new ‘gadget’: a Battenberg cake tin.

Buttering and flouring the tin is already very fiddly business. For the dough I used the recipe that came with the thing. You need to whisk 175g butter with 175g sugar until creamy. Add 3 eggs one by one.

To this add 175g flour and baking powder (about half a teaspoon).

Separate the mix into two equal parts and dye one part pink.

Finally, fill the dough into the tin (again very fiddly business) and bake at 180 degrees Celsius (preheated oven) for approximately 30 minutes.

That’s all I had the time for today, so the battle continues tomorrow!
