Salmon on a bed of radish and apple

Today’s recipe is a brand new one that I received with the newest Betty Bossi newsletter (a lot of ‘new’s in that sentence…): smoked salmon on apple and horseradish salad. It sounded light, easy and unusual so I simply had to try it.
You need 1 apple, 1 radish and a bag of onion shoots. Thinly slice the apple and radish and add the shoots.


Instead of the olive oil dressing that’s in the recipe I made a dressing with sesame oil, rice vinegar, salt and pepper.
Add the salmon and you are done:

And it works just as well with parma ham.

Looks pretty and tastes great. What more do you want?
