Fancy Pancakes

Initially I wanted to make my own nougat today. But then I practically fell over the crèpe table grill that was a (great!) birthday present and changed plans.
The recipe for the pancake mix is my boyfriend’s mother’s. Per person she uses 2 eggs and per egg 1 heaped tablespoon of flour.

Add a pinch of salt and enough milk to make a runny pancake dough. For extra lightness I was told to add a splash of mineral water.

For the toppings I prepared diced ham, Black Forrest ham (dry cured), goats cheese, blue cheese, Ajvar, honey, Nutella, and a raspberry/rhubarb compote.

Making the pancakes was easy and fun.

Of the savoury toppings I liked the blue cheese with the honey best.

I had made too much of the pancake dough but we used it all up anyway and cut the leftover pancakes in stripes. I will freeze them and use them as Flädle (i.e. noodles) in a soup.
