I have two recipes today because we got a fresh trout from the local pond. Perfect to go with the asparagus salad I had planned for today.
I always boil asparagus in water so I was keen to try the recipe for asparagus salad from Betty Bossi for which you fry the asparagus in a pan for about 10 minutes.
For the dressing simply mix 6 tablespoons white balsamic vinegar with 2-3 tablespoons olive oil and add 1 chopped up hard boiled egg. Season with salt and pepper.
To the asparagus I added some cherry tomatoes and then put the hot veggies in the dressing to soak and cool.
As for the fish, I floured and filled it with finely diced onion, parsley and fish seasoning mix. Then I fried it in olive oil until nice and crisp.
A lovely light dinner for Good Friday!
