Vinaigrette

After the last two recipes I was a bit at a loss at what to do next. I chose something very mundane but essential: salad dressing.
I have to admit I often buy ready made dressing in bottles. I have not found one that I really like, though. And I took a good look at the label of the bottled French dressing in my fridge and got a bit worried. It is full of weird stuff. E-Numbers, yeast, monosomethingglutamate.

Making your own dressing is simple. I chose a herb honey vinaigrette recipe from Betty Bossi.
I did not have time to buy fresh herbs and soaked dry ones in a bit of chicken stock.

I added garlic chives. A herb I had never heard of before.

Add oil and vinegar with a ratio of 1:3. I used walnut oil and apple vinegar.
Add 1-2 teaspoons of honey.

Add one finely chopped shallot and half a pepper also finely chopped.

Season with salt and pepper and pour over your salad. Fresh, crunchy, yummy!
